Weekly Menu May 30

Oh man this is a good one. And it uses my old buddy the crockpot.

Jerk Chicken Soup

6 chicken breasts, skinned and cleaned

3 cans of whole button mushrooms, drained and rinsed

1/2 bag of baby carrots, rinsed

1 1/2 cup of brown rice

4 chicken bullion cubes

3 tblsp of Jamaican Jerk seasoning (this is premade mix of dry spices)

Sea Salt

Black Pepper

Seriously just layer the ingredients into the pot and sprinkling some of the Jerk seasoning and some sea salt and black pepper (but not much because there is salt and pepper in the Jerk seasoning) on each layer. Fill the crock pot with water and let it go on low for about 6 hours. By the time it finishes any attempt at picking up the chicken will result in it falling off the bone. To quote my dad (I haven't eaten any yet), "It'll work."
