Weekly Menu Oct. 31 Extra Stage !!!

Okay anyone can make a simple Rum Cake but it takes a special mind to think up a Velvety Rum Cake. (I used recipe as a base and tweeked it a bit.)

Ingredients:

* ---Cake---
* 1 cup chopped, toasted pecans or walnuts
* 1 18-1/2 ounce yellow cake mix
* 1 1-3/4 ounce (4-serving size) instant vanilla pudding mix
* 4 eggs
* 1/2 cup cold milk*
* 1/2 cup vegetable oil
* 1/2 cup Bacardi dark rum
* ---Glaze---
* 1/2 cup butter
* 1/4 cup water
* 1 cup sugar
* 1/2 cup Bacardi dark rum

That's the original recipe.

* 1 18-1/2 ounce yellow cake mix
Swapped for a red velvet cake mix

* 1/2 cup cold milk
Swapped for Silk Soy Milk (Vanilla flavor)

* 1/2 cup Bacardi dark rum
Swapped for Captain Morgan Spiced Run (dark). Oh and used a bit more than 1/2 cup...

* 1 cup chopped, toasted pecans or walnuts
I actually used an entire 6oz. of walnuts and chopped them.

From there just follow the directions on the site.

The cake is in the oven now. I'll give an update on how it goes.
