Weekly Menu Sept. 26 Extra Stage!!!

Wow its been a while since I've done one of these. Its not that I haven't been cooking its just that I haven't been cooking anything of note. Although last week I did make a....uh....something. Its a dessert but I don't know what to call it.

1 16oz Container of Cool Whip
1 box of Instant Pudding Mix
1 8oz Container of Cottage Cheese
1 1/2 Shredded Coconut
1 cup of milk (be ready to add a little more)

You will need a large bowl for this. Put your Cool Whip in first and mix it up with whisk to loosen it. Next add in the Cottage Cheese and mix it up. Mix in the Coconut. The thing to do is mix in the Pudding Mix. Now this is going dry up the mixture a bit...which you will balance out with the milk. You may need to add more if the 1 cup is not enough for the desired consistency (personally I tried to get to the consistency of the Cool Whip before adding in the other ingredients).

The cool thing about this recipe is that its highly customizable. You can use whatever flavor of pudding mix you want, or even switch to jello mix (remember to reduce the milk if you use jello mix). Perhaps you want to replace the coconut with those little marshmallows? Maybe use a different flavor of Cool Whip? In fact you pretty much just need the Cool Whip, Cottage Cheese, and milk and then customize from there.
